    How to choose romaine lettuce?

    When purchasing romaine lettuce ensure it’s firm and the leaves are tightly closed. If purchasing a mix or greens that is already packaged, check that there are no signs of a rust or brown color.

    Are anchovies in Caesar salad?

    Anchovies can be found in modern recipes for the dressing of a Caesar salad. The fish provides the dressing a mouthwatering umami flavor.

    Is raw egg needed in Caesar salad dressing?

    Freshly made and traditional Caesar dressing will call for raw egg. The egg is added to lemon juice which allows it to cook more gently.

    Ingredients

    • Anchovy Fillets
    • Garlic
    • Kosher Salt
    • Egg Yolks
    • Lemon Juice
    • Dijon Mustard
    • Olive Oil
    • Vegetable Oil
    • Parmesan
    • Ground Black Pepper
    • Croutons
    • Romaine

    Instructions

    Prep: Chop the anchovy fillets, garlic, and a dash of salt, once chopped use the side of the knife to mash into a paste. Set the paste aside. In a separate bowl, mix the egg yolks, lemon juice, and Dijon mustard together. Add in the paste. Slowly add in the olive oil then vegetable oil to the egg mixture. Whisk until the dressing is glossy and thick. Add in the Parmesan to the mixture and season with salt pepper. More lemon juice can be added if desired.

    Serve: Place the romaine in a large bowl or tray, pour dressing on top and toss. Add in the croutons, grated Parmesan, and ground black pepper lightly toss.

    What goes well with Caesar Salad?

    Soup if the salad will only be a starter. If it’ll be a full meal add in chicken!

    Variations

    Try to store separately, if it’s already mixed, store in an airtight container and refrigerate. Consume within 1 day.

    Mash the anchovies and garlic with a salad fork or use a pestle to easily turn into a paste.
